Q: What's the story behind your passion for the hospitality industry, and how does it influence your approach to running our yacht club's restaurant kitchen?
Hot flames, sharp knives, and pressure like no other industry, all to produce a meal that won’t be forgotten easily is what drew me to the industry, that’s all that matters in the end, an all-round unforgettable moment of dining pleasure.
Q: Can you share a memorable dining experience from your own life that has shaped the way you view the importance of exceptional service and ambiance in a restaurant?
The first time I spooned into a chocolate fondant at a Michelin-star restaurant, it felt like time slowed down as the chocolate oozed out – details matter.
Q: As the head chef, what aspect of running the kitchen brings you the most joy, and why?
The freedom of creativity - it’s my personality on a plate.
Q: What's your favourite dish on the menu, and what makes it special to you?
My favourite dish would have to be The Benjamins. The first real sauce I learnt to make was a beautiful hollandaise, fresh every morning.

Our FBYC Youth team is doing very well in the club racing. The second L 26, Hooligan was launched on Wednesday and has shown her credentials in the racing. She will also be used for the club’s youth training. If any member has a youngster that would like to join in, please come see me at the Sailing Office.
Ryan Gibson continues to do very well in 2nd place overall, only 8 points behind Perseverance. He is looking good in Race 10. Our FBYC members continue to follow and support him. You can follow the race at www.clipperroundtheworld.com.
